So yes my last post was also a version of the chocolate chip cookie, but today's recipe is so different and still delicious! Its going to be 90 degrees here today so I decided to start the day off with some of my banana ice cream with these healthy, easy, and raw cookie dough bites :)
Ingredients:
1/3 cup raw cashews
1/3 uncooked oats
1 Tbsp agave, maple syrup, or honey
(you might be able to use water & stevia, but I haven't tried yet)
Method:
1) Throw nuts, oats, and sweetener into a blender or food processor until it forms a mini dough ball
2) Hand mix in chocolate chips.
3) pinch off bite sized pieces and roll into balls.
4) I recommend freezing them for 30 minutes to an hour to get rid of some of the chew factor, but you can eat them right away too.
These were awesome in banana ice cream, but you can eat them alone too. I bet they'd be great on top of greek yogurt or squished as a whole on top of a brownie (not so healthy, but sounds amazing!)
Other flavors:
- Mix in cinnamon and raisins for oatmeal cookie bites
- Use pecans in place of cashews and add vanilla for a shortbread flavor
- Add dried coconut for a macaroon taste
